Notes: This is an acorn-fed 3-yo sow. Named Lily, she was a very special and loved animal. Free range, wild acorn foraging. It’s an American Guinea Hog breed, not a breed used for prosciutto because of the small size. This is a very interesting prosciutto option. You may need a ham holder to cut by hand or a slicer if you want to debone. At almost 2 years of aging it will be on the drier side (that’s how I prefer them). The meat part is covered with white Penicillium mold for protection, flavoring and curing support.
