Notes: Massive Culatello. I waited so long for the chance to cure a massive Culatello like this. This beauty comes from a 3-year old sow raised free range by the good folks of Newman Farm. I nicknamed her “Big Mamma”. I prefer older animals for charcuterie. I feel their flavor is bolder and more complex. Getting my hands on a 3-year old free range heritage breed doesn’t happen often. This one is special! Huge Culatello from a great farm. Lost 48% weight. Medium for dryness. Has been in vacuum since March 2022.
